The grapes are selected from vines on the highest terrasses – pebbly quaternary soil on terraces. Very dry climate with exceptional exposure to the sun.
The whole harvest is destemmed, followed by a long maceration and mutage - a process used to make sweet wines with higher alcahol content.
The colour is deep purple with cherry red hints, the nose of brambles is intense and full of forest fruits. The dominant flavour is red berry and the tannins are smooth. This is a well-structured wine, with long-lasting aromas.
Drink chilled (12°) as an aperitif, with pan-fried foie gras, with chocolate fondant or salted butter macaroons. We like it with Chocolate Tart!
